They are being used on a hot water system off of a header.

It's hard to say why you are using these. I would say that butterfly valves are not typical, but they should work pretty well. They have very little resistance to flow, so they should be pretty efficient. I also assume they have handles that can be locked into multiple positions, so the throttling can be controlled relatively easily.
